Join Pat Silcock, as he shares his knowledge on his specialty area: the relationship between food & their packaging, how to extend shelf life, what the future looks like (how will recycled content in packaging affect this relation???), and more. 

About Pat Silcock: Pat is a Principal at PJ Innovations Limited, Operations lead at Food Otago, part of New Zealand Food Innovation Network (NZFIN) and Associate Professor in Department of Food Science at University of Otago

With a background in food chemistry and sensory science and 30+ years working with food, agricultural, cosmetics and pharmaceutical companies to develop help new products, understand and improve food quality (including sensory evaluation, both consumer and trained panels), extend product shelf life and understand product spoilage and general consultancy. I also have some specific expertise around flavour science and fermentation. 

For 29 of those years he managed the Product Development Research Centre (PDRC), which was part of the Department of Food Science at the University of Otago and offered commercially focused research and consultancy services to industry.

He has experience working with small to medium-size enterprises, cooperatives and multinational companies, working with companies based in New Zealand, Australia, South East Asia, China, USA and Europe.
