Turning waste into a killer & sell out product

 

We sat down with Luke from Sunshine Spores during Global Entrepreneur week to chat about how the COIN South Make It course helped him to solve a product waste problem. Watch the video above for the full details or transcript below.

“Hi my name’s Luke, my partner Rachel and I've got a business called Sunshine spores growing gourmet mushrooms. Specialising in oyster mushrooms, mainly selling them to high end restaurants is an alternative protein source.

The problem was we had to grow excess [mushrooms] to supply to these restaurants which meant we had a lot of waste mushrooms.

Through the Make It course we tested some dried mushrooms, powdering it, meat rub, and a mushroom jerky. The mushroom jerky has been an absolute hit and is selling out at the markets each week.

We're supplying about 50 kilos of mushrooms a week direct to restaurants and 10% of that is waste, which now we've got the jerky going that's dropped that down to zero.“
